Lemon curd butter cream icing recipe
- 75g butter
- 250g icing sugar
- 3 tbsp lemon curd
- Beat the butter with a wooden spoon or electric mixer until creamy.
- Beat in the icing sugar.
- When mixture is light and smooth add the lemon curd and mix.
- Use to sandwich an 8” cake or to top 12 cupcakes.
