I love summer salads but can find I get stuck in a rut eating the same salads and using the same dressings. So I’ve been on the lookout for new flavors to excite the family over the summer. This Gluten free Carrot and orange salad is definitely a winner. The the sharp citrus tang and a hint of spice from the cumin it can transport you to distant lands in one fork full.

Gluten free Carrot and orange salad with cumin and pumpkin seeds

Course Salad
Servings 4 people

Ingredients

  • Small bag of mixed leaf salad
  • 300 g carrots peeled and grated
  • The zest and juice of one large orange
  • 1 tsp cumin
  • 1 tsp dried mint
  • 2 tbsp pumpkin seeds

Instructions

  1. Grate the carrots and place in a large mixing bowl.
  2. Zest the orange and add to the bowl.
  3. Stir in 1 tsp of ground cumin
  4. Juice the orange and pour over the carrots.
  5. Mix well.
  6. Place the mixed salad leaves in your serving dish.
  7. Spoon over the carrot mix and any juice remaining in the mixing bowl.
  8. Top with two tablespoons of pumpkins seeds and the dried mint.

  1. Ooh, this salad looks good. Does it matter what kind of mixed leaf salad you choose? I tend to prefer darker greens like spinach, and I'm wondering how mix that includes spinach would taste with this. I think it would be good?! What do you think?
