I don’t know if you have come across the sprializer trend yet, unless you are perhaps a gluten free eater like myself. I bought one after getting my diagnose as a coeliac and was looking for alternatives to the gluten free pasta and noodles which I had found so disappointing. This was the answer, not only can you make great noodle from it but it’s also great for making salads. This Fruity creamy slaw was a real hit with my family and it’s low fat and nutritious. Bonus!
Gluten free Fruity creamy slaw
- 300 g carrots
- 1 beetroot
- 1 tbsp sultanas
- 1 tbsp cream cheese.
Top and tail and peel the carrots.
Peel the beetroot.
Use the noodle attachment on your spiralizer and process the carrots and the beetroot into a large bowl. If you don't have a spiralizer you can use a grater and get similar results.
Stir in the sultanas.
Finally, stir in the cream cheese until everything is coated.
Chill in the fridge until serving.
