A light and fluffy tea time treat. This Gluten free Victoria sponge recipe is perfect with a cup of tea. Who said being gluten free meant that you had to miss out on cake? If you find sometimes your sponge sinks slightly when it comes out of the oven, try leaving it in the oven turned off for 5 minutes with the door slightly open. I find this can really help.
