Last week it was the start of the summer holidays. We try to have a theme for each week at home, with focused activities, perhaps a trip and some themed food. I have been getting into having smoothies for breakfast since my diagnosis. The boys often have a small glass too, so we thought we would include these in our superhero theme. All the superhero smoothies are gluten, wheat and lactose free.

They are all suitable for vegetarian and vegan diets.

These were our favourites from the week.

Hulk smoothie

Hulk smoothie

Make one very large glass.

Ingredients

  • 1 banana
  • 3 kiwis
  • A small bunch of grapes
  • 1 tbsp Soya Yogurt
  • 1 cup Unsweetened almond milk.

Instructions

  1. Peel the banana and kiwis.
  2. Wash the grapes.
  3. Place in a blender with the yogurt and almond milk.
  4. Blend until smooth.

Recipe Notes

Best enjoyed straight away. If you want a more chilled smoothie use a banana that has been peeled, chopped and frozen overnight.

The next recipe was definitely my favourite from the week. I am totally addicted to the toasted almond butter.

Superman smoothie

Superman smoothie

Ingredients

  • 1 banana
  • 4 strawberries
  • 1/2 cup raspberries
  • 1 tsp toasted almond spread
  • 1 cup Coconut milk.

Instructions

  1. Peel the banana.
  2. Wash and hull the strawberries
  3. Wash the raspberries
  4. Place the fruit in a blender with the almond spread and coconut milk
  5. Blend until smooth.
  6. Enjoy straight away and feel like a superhero all day.

This was most popular with the boys and if left for 5 minutes after blending it sets into a jelly smoothie which the boys loved eating with a spoon.

 

Captain America smoothie

Ingredients

  • 1 banana
  • 3 strawberries
  • 1/2 cup blueberries
  • 1 tbsp smooth peanut butter
  • 1 cup coconut milk.

Instructions

  1. Peel the banana
  2. Wash and hull the strawberries
  3. Wash the blueberries
  4. Place the fruit in a blender with the peanut butter and the coconut milk.
  5. Blend until smooth.
  6. Enjoy straight away or leave for five minutes until set and eat with a spoon.
