Gluten free Muesli recipe
When I was first diagnosed a coeliac I found that the breakfast options were dull and not as healthy as what I had previously eaten for my breakfast. I have always been a fan of breakfasts such as muesli and granola and there is nothing stopping you from eating a great tasty and nutritious breakfast as long as you source the right ingredients.

This muesli recipe is packed full of nuts, seeds and fruit, so you only need a little to give you a great start to the morning.
This recipe will make a big batch that will fill a five litre cereal container, stored in an air tight container it will keep for up to four weeks.
You will need:
40g sunflower seeds
50g coconut, I have used a mix of shredded and shaving just to add texture
50g flaked almonds
75g walnuts
300g Pure gluten free oats*
1 tbsp. flax seed
125g dried apricots or papaya
75g sultanas
1 tsp ground cinnamon
Measure out all of the ingredients and then mix in a large bowl before transferring to your air tight container.
This muesli is great served with soya yoghurt and banana and even better if you get to eat it outdoors!

*I know that some people so are coeliac are still affected by eating oats due to the similar protein. If this is the case, try this muesli recipe by changing the oats to fibre flakes. They make a great alternative.

  1. this looks great, I love museli but always just buy the prepackaged stuff. I might have to try making my own as I’m not really a fan of shaved coconut so I can just leave that out 🙂 Thanks so much for linking up to the #RecipeRoundUp
