2 easy winter gin cocktail recipes

I love a good cocktail, the combination of flavours makes a much more interesting drink. Plus I love the ritual of making them. But my go to recipes, just don't suit the colder months. So I've come up with two easy winter gin cocktail recipes. That have everything you'd want from a festive drink.

I was sent the amazing Mermaid gin from the Isle of Wight Distillery. It has 10 botanicals including rock samphire, so I didn't want to compete with those flavours. I have chosen complimentary flavours that hopefully invoke festive smells and memories.

Spiced gin warmer
Yield: serves 2

Spiced gin warmer

Prep Time: 2 minutes
Cook Time: 5 minutes
Total Time: 7 minutes

Ingredients

  • 100ml Gin
  • 400ml cloudy apple juice
  • 1/2 lemon
  • 1 bay leaf
  • 1 stick of cinnamon
  • 1/2 coriander seed
  • 1 tsp runny honey

Instructions

  1. Place the bay leaf, cinnamon, lemon and coriander in a mulling bag.
  2. Put apple juice in a saucepan and add the spices. gently warm for 5 minutes
  3. Stir in the honey
  4. Allow to cool.
  5. Remove mulling bag
  6. Stir in the gin
  7. Pour into two glasses
  8. Serve

Winter gin iced tea

Prep Time: 2 minutes
Cook Time: 30 minutes
Total Time: 32 minutes

Ingredients

  • 1 chamomile tea bag
  • 500ml water
  • 100ml gin
  • 100ml spiced rum
  • 100ml elderflower cordial
  • 100ml cranberry juice

Instructions

  1. Boil the water, add the chamomile tea bag and brew for 10 minutes.
  2. Remove the tea bag and allow to cool for 20 minutes.
  3. In a jug, mix the tea, gin, rum, cordial and cranberry juice.
  4. Stir well.
  5. Serve with ice.
