Eyeball Cupcakes (Gluten Free)

Want to bake something super easy but fun for Halloween. My kids loved making these Gluten Free Eyeball Cupcakes this weekend. They are quick and easy to make, gross enough to appeal to the kids yet tasty enough not to put the adults off!

To make my Gluten Free Eyeball Cupcakes

You will need:

  • 2 Medium eggs
  • 100g Gluten free self raising flour
  • 100g Caster sugar
  • 100g Baking Margarine
  • 1 tsp vanilla extract
  • For the decoration
  • 200g icing sugar
  • 100g butter
  • I tsp vanilla extract
  • 3 tsp raspberry jam
  1. Preheat the oven to gas mark 4 or 180c.
  2. Line a cupcake tin with squares of greaseproof baking parchment.
  3. Measure out and place all the cake ingredients into a food processor.
  4. Process until smooth and creamy.
  5. Spoon the mixture out equally between the twelve cases.
  6. Bake for 15 minutes until golden brown and springy to the touch.
  7. Remove from the tin and allow to cool on a wire rack.
  8. When completely cool, make the icing.
  9. Place the icing sugar, butter and vanilla extract in a food processor.
  10. Blend until smooth.
  11. Use a piping bag with a star shaped nozzle to pipe swirls on the top of each cake.
  12. Add a quarter of a teaspoon to the center of each iced cake.
  13. Optional add Halloween cupcake toppers.

  • 100 g butter
  • I tsp vanilla extract
  • 3 tsp raspberry jam
